This is the standard Stave & Barrel from Glenns Creek, but it has been “extra aged.” They bottle the regular product from the barrels before emptying the entire barrel. The pump cannot access the last 20%, so they combine the “dregs” from the barrels into one barrel and allow it to age longer. The result is a richer, more balanced version of Stave & Barrel. The color is also darker. The taste is full of caramel and vanilla with strong cinnamon and clove underneath. For me, a little water really opens up the full flavor. I love this bourbon. Glenns Creek is a small operation, but it's powerful.
