Indian Creek, which uses 200-year-old copper pot stills from the original distillery, is part of the modern surge of micro-distilleries that claim a connection to the "pioneering spirit" of distillation. They create a distillate that pushes the boundaries of what is legally defined as "rye whiskey" (the bottle states "Distilled from a Rye Mash," while "Rye Whiskey" is the brand name). This process involves adding hops to the mash, salt and wood chips to the still, and hickory inner-staves to their quarter-sized barrels. Some of these methods have historical ties to American whiskey traditions: hop teas were historically used to cleanse stills due to the plant's antimicrobial properties (explaining hops' presence in beer), and virgin oak casks have only been mandatory since 1964. The mash bill is a family recipe consisting of 60% rye, 25% corn, and 15% malted barley. It is bottled at 40% ABV.
