This Bourbon Whiskey from St. Augustine Distillery in Florida is rich and barrel-proof. It was made with a mash bill of 60% Florida corn, 22% barley, and 18% Florida wheat, aged at least 3 years in American white oak barrels, and bottled at 109.1 proof. It opens with an aromatic profile of grains, wood, fruits, flowers, nuts, and mulled wine spices. The rich body adds notes of corn, apricot, cherry, maple, vanilla custard, and rose petals, leading to a slightly creamy, medium-length finish with flavors of pepper, oak, chocolate, toffee, caramel, coconut, and leather. I also sampled this at the St. Augustine distillery. Similar to their standard bourbon, I was quite let down. There's no way this bottle justifies the $200 price tag. I might have considered paying $70 or $80, but it needs significantly more barrel time to be worth the cost. It lacked body, depth of flavor, and had a very harsh finish. This distillery is a definite pass until they improve.

This is an excellent bourbon. The distillery is relatively new but has produced a fantastic product. A limited autumn 2019 release of 400 bottles, it's a great purchase. Eagerly anticipating the next batch. It beautifully balances sweet and spicy notes. Smoother than anticipated.

Irwin Llamas 4.5

Exquisitely crafted. Aged in barrels previously used for an Old Fashioned Mix, this stands among the finest bourbons I've encountered. Only 300 bottles were produced. I'll regret finishing this one. It's one of the best bourbons I've ever had.

Dark amber with an incredible mouthfeel. Every taste receptor is activated with each sip, and the finish lingers for minutes. Unlike anything I've experienced before. Acquired bottle 300 of 300 from the 2020 fall batch.

A bit dull, with some old-fashioned sweetness that clashes with the bourbon. The price is too high.
