I haven't been trying many new things lately, but this looks promising. The larger, uncut, unfiltered version received high praise from me, and I've enjoyed other young bourbons from warm climates, so expectations are high. I poured a glass and let it rest. The aroma is appealing yet straightforward. It's quite fruity, with much less alcohol noticeable than expected for a 120 proof spirit. The palate is pleasant but again, simple, very much like caramel apple. The initial pour was quite good, but this one deteriorates by the second pour. Its youth is very apparent here. It's fiery and disjointed. The aroma is barely detectable, and bitter alcohol comes through on the palate. I'll set it aside and try it again in a month.

Extremely viscous. It clung to the glass for a minute before leaving a trail. It's the color of springtime honey. The nose has spiced fruitcake, orange peel, green apple, and a hint of wintergreen. There's a lot happening there. It's hot on the palate almost immediately, and the heat intensifies with the proof and the cinnamon. It's almost numbing. Burnt caramel and a dry, spicy woodiness on the finish. It also brings to mind golden raisins. It has plenty of complexity, but its youth is evident. It lacks subtlety and nuance. It makes an outstanding old fashioned.

Smell: Rye spice, wintergreen, chewy caramel candy, brown butter. Palate: Cinnamon red hots, honey, rye spice, heat, and caramel candy. A lot of alcohol is present upfront. You can definitely tell this is on the younger side. I enjoy it, but it doesn't feel as well-rounded as Uncut Unfiltered.

The aroma is quite vibrant with cherry, oak, molasses, and a hint of medicine. The palate delivers a strong cherry presence followed by oak. Some caramel molasses is also noticeable. The conclusion is slightly perplexing with a pronounced tannic astringency at the rear of the throat, at least in the specific bottle I sampled.

A respectable drink, though somewhat thin and grassy. The regular UCUF is vastly superior in richness and body, and honestly, the sweet spice of the small batch and even the plain bourbon are more appealing. I'll probably reach for those instead of purchasing this again.

This is a total honey explosion. The aroma suggests youth, but the taste, texture, and aftertaste are excellent. For the price, this is a must-try. Flavors of Honey, tangy red fruit, vanilla, and subtle oak notes. It has a perfect viscosity.
