Color: Deep molasses. Nose: Chocolate dominates, tempered by roasted peanuts and grilled pineapple. Assertive yet not overwhelming notes of nutmeg and sherry are present, along with a hint of ground coffee. Palate: Tastes like apple pie with cinnamon crust, black treacle, orange rind, and fresh maple syrup. It's spicy and dark with a substantial mouthfeel. Finish: Almost woodsy. Barrel notes are evident, along with pine nuts and sap. It leaves a lingering savory bitterness, similar to crispy dark bacon. With Water: The nose becomes much more floral and gains a sweet, mellow caramel. The palate becomes sweeter (honey, brown sugar) and richer (pork belly, sweet potatoes). The finish retains a minty, earthy version of its forest character.
