2019 Release (Barrel #6): A rich American Whiskey by Dave Phinney for The Savage & Cooke distillery in Mare Island, California. Mash Bill: 95% Corn, 4% Rye, 1% Malted Barley. Aged at least 5 years in ex-Bourbon barrels, then finished in his Napa Cabernet barrels. Bottled at 44% ABV. It starts with spicy notes of maple wood, cardamom, buttered toast, and black cherry. The palate is bold with baked dark fruits, butterscotch, caramel, honey, and hazelnut. It finishes long and woody. Sampled July 2019 / Reviewed August 2022.
