Canadian whiskey can be tricky territory; I haven't found one I truly enjoy yet. An 8-year-old Schenley O.F.C. was a leftover from an estate purchase, so I'll sample it. The aroma presents corn sweetness, vanillin, and cinnamon, interspersed with chamomile, mango, and a sporadic sharpness. It arrives bold and wild, with peppery spices, brown sugar, and botanical notes defining its evolution. Crème brûlée, grapefruit, and subtle tannins emerge in the unexpectedly lengthy conclusion.
