About this bottle

This is the distillery's fourth single malt release. Its maturation begins in used beer barrels before being moved to casks that previously held Merlot, Port, and Sherry. It is bottled at 43% ABV.

Santis Malt Sweet, fruity, floral, caramel, sugar, with minimal pepper. 3.75 Medium pepper, oaky, dry, with green apple fruit notes. 1.75 Oaky, dry. 1.75 2.25 SANTIS MALT SWISS ALPINE WHISKY APPENZELLER SINGLE MALT EDITION HIMMELBERG 43% Swiss whisky Produced at Brauerei Locher, near the Liechtenstein border, the Säntis Malt team has blended whisky aged in their distinctive beer casks (the brewery has a history dating back to the 1800s) with liquid matured in various wine barrels for this release, Edition Himmelberg. The outcome? A delightfully fruity Swiss whisky with underlying cereal notes characteristic of beer-influenced drams. Sweetness, very subtle and light on the nose, but the flavor profile is distinct enough to appreciate: sweet cotton candy, sweet red fruits. 3.75 Honestly, it doesn't taste like whisky; it has a hint of malt and a dry bitterness. It's flat, lacks complexity, and tastes more like flat beer, with some raisin notes, light cream, and mild pepper. While it's an easy drink, it's not for those who prefer a complex, full-bodied whisky. 1.25 Nutty, with mid-range oak notes that persist. 2.25 2.25 I'll keep this on my bar simply because of its unique cask aging.

I wasn't impressed when I tried some Santis Malt 3 years ago, but this pour was quite a different experience. The nose picks up on both the beer malt and red wine influences from the casks. The palate has some nice pear notes that then turn into white pepper spice. The finish continues the spice and is medium to long.
