Jarvis Coon 3.5

It has a lovely burnished amber color. The aroma is likely its strongest feature. Sweet wood varnish, vanilla cream, hazelnut, and sugared apples are detected. The Palo Corto influence is subtle on the nose. If tasted blind, I might mistake this for an aged high-rye straight bourbon. On the palate, it doesn't present like a rye. The spice level is mild. A strong note of bitter wood tannin hits upfront, which can be challenging initially but mellows with a few sips. Rich vanilla and caramel flavors persist, yet the fortified wine finish remains unapparent. This spirit benefits greatly from added water and air. Once it opens up, wine-like fruits and sweetness emerge, though it remains quite dry. Toasted nuts and dense, grilled fig are also present. It becomes significantly more interesting and enjoyable with aeration and water. I find myself wanting more of this than anticipated. It's quite an enigmatic drink. I'm strongly considering purchasing another bottle. 🤔
