Redwood Empire Cask Strength Emerald Giant, a 2022 release, is one of three limited edition bottlings featuring uncut and unfiltered whiskeys from the distillery's main offerings. Emerald Giant is a blended straight rye that features a mash bill of 94% rye, 5% malted barley, and 1% wheat. The rye components were aged in 53-gallon, char #3 barrels for a minimum of four years, with some aged up to six years. Due to maturation in the California fog belt, the cask strength of 116.4 proof is lower than many comparable offerings. Cask Strength Emerald Giant has been available across the U.S. since October 2022, with a suggested retail price of $70.

Requires a small addition of water to reveal its full character. It transforms into a really nice sweet spearmint note with some lighter fruit. Excellent mouthfeel, a decent finish, and an overall pleasant rye.

Simply a fantastic Rye. It certainly has a great spicy feel and rye character with the extra kick from the cask strength cinnamon sensation.
Dominant spearmint flavor. Sweet, medicinal, and a bit floral. Pleasant mouthfeel and finish. This is a rye for true rye enthusiasts.
Surprisingly mellow. Slight cinnamon warmth. A good sipping rye.
