The Redbreast Dream Cask Pedro Ximénez Edition debuted on World Whisky Day in 2019. It is a combination of four single pot still whiskeys, aged between 20 and 33 years. While two components aged fully in second-fill ex-bourbon casks, the other two underwent finishing periods in ex-sherry butts: one in ex-oloroso and the other in ex-Pedro Ximénez. These four whiskeys were then married in a Pedro Ximénez butt before bottling. Production was limited to 924 bottles.

This is like a dessert in liquid form. Intense dark fruit, raisins, and blackberry jam flavors. A slight ethanol burn fades quickly, leaving behind sweet dark fruit and sherry.
A solid sherry influence with a brief, light sting that vanishes fast. A lingering taste of dark fruit jam with a subtle heat. Very pleasing.
Prominent sherry notes and very smooth.
