Initially, the ethanol overpowered the nose, but after 3-5 minutes, it becomes delightful. Espresso beans, chocolate, oranges, and fresh mango jam emerge. The palate features excellent pot still spices, a distinct orange creamsicle note, vanilla, and honey. The finish is impressively long, with notes of dark roast coffee and more pot still spices, rounded out by orange. Outstanding, and truly among the top-tier Irish whiskies.

About this bottle
Dair Ghaelach, meaning "Irish oak" in Gaelic, is an apt name for this single pot-still whiskey. It is a blend of Midleton whiskey aged 15 to 22 years, initially matured in ex-bourbon barrels. Under the supervision of Master Blender Billy Leighton and Master of Maturation Kevin O'Gorman, this whiskey receives an additional 10 months of maturation in virgin oak sourced from Grinsell Woods on the Ballaghtobin Estate in Co. Kilkenny. This review is based on Tree 6; the product comprises 10 distinct trees, each with slight variations in flavor and ABV inherent to its unique origin.

Absolutely remarkable. Highly complex, with significant peppery spice and an intense oak flavor unlike anything I've ever encountered. It truly opens up with a few drops of water, reducing the high alcohol burn. There's a faint, yet somehow very enjoyable, aftertaste reminiscent of baby vomit. I adore this whiskey.
