About this bottle

The third bottling in Penelope's Cooper Series, which pairs whiskey with international wine casks, this release began as a six-year-old straight rye whiskey. It initially matured in new, charred American oak before spending eleven months in former Tokaji wine casks from Hungary.

Drake Krebs 4.3

A blend of bourbons aged four to five years, this was finished in Tokaji casks for nine months and bottled at 56.5% abv. A sample was received from a friend. The nose carried brown sugar, butterscotch, vanilla, Maraschino cherry, blackberry, medium oak, and moderate ethanol. The palate had citrus oils, black pepper, brown butter, raisin syrup, spiced apple, and sweet oak. The finish was medium-long, with syrupy sweet oak, sticky brown sugar, light black pepper, cookie batter, nutmeg, and mild ethanol. Initially uncertain about this one due to limited details and a general dislike for finished bourbon, I found it surprisingly good. Unlike red wine or port finished bourbons that can overpower with artificial fruit, the Tokaji finish provides syrupy fruit and sugars without masking the original bourbon's character. I might purchase a bottle if I encounter it.

Hank Hwang 4.3

The aroma presents deep plum, red grapes, and craisins, with floral hints and a whisper of marshmallow. The taste features deep red berries, stone fruit, and sugary strawberry jam, finishing with rye spice, showing excellent balance. The finish is medium, with slight tannins and a pleasing blend of spicy sweetness. A stellar offering that harmonizes the strength of a high-rye mash bill with the sweet notes of dessert wine.

Wow! Sweet and vibrant right from the start. The tokaji influence is very prominent. Excellent wine character with a beautiful funk, producing notes similar to a Brett sour beer. Wonderful.

Ashley Castillo 4.5

Surprisingly sweet and light. The influence of the wine casks is definitely noticeable. It almost added a honey flavor, which I adored!

Virginia Jain 3.3

Tastes earthy. Similar to a poor quality 4-year rye from Willett. Disappointing.
