About this bottle

Penelope Toasted Bourbon is a permanent addition to Penelope's product line. It uses their characteristic four-grain bourbon (made with corn, rye, wheat, and malted barley) at full maturity. This is followed by a finishing period in new, custom-toasted barrels, where the char and toast levels differ with each batch. It is bottled at 100 proof.

The nose presents a typical profile of vanilla, caramel, and cinnamon, with apple notes appearing as it rests. A subtle toasted oak undertone is present. The low ethanol level is commendable. The palate echoes the caramel and vanilla from the nose, developing into a custard or flan-like quality, complemented by baked apple, oak, and shortbread. However, the flavors are somewhat muted and lack intensity, making it a bit bland. It drinks like an 80 proof spirit, which isn't a positive observation. The short finish reveals brown sugar, pepper, and baking spices like cinnamon, allspice, and clove. While oak is present, it's not particularly toasty for a toasted expression. A pleasant burst of lemon/lime citrus appears near the end. The mouthfeel is thin, light, and airy, suggesting it could benefit from more body. It exhibits some MGP brightness, but it's all show and no substance. There's nothing inherently wrong with it, but at $53.99, better options exist at this price. At this point, I'll likely stick to limited releases of Penelope and bypass the standard offerings.

Final Day No. 24! I have finally reached the end of the collection. I must say this was quite a delightful experience. It had me anticipating each and every day. Perhaps, I will undertake next year's new adventure if Flaviar decides to continue this exploration. On to the review! The nose kept me pondering due to the variety of sensations it triggered. I narrowed it down to burnt sugar, vanilla, cinnamon, and barrel char. The flavor was very captivating and somewhat more intricate. Initially, I detected notes of caramel and baking spice. After the third sip, I was able to identify an additional range of flavors alongside the primary ones I listed. Barrel char, cherry, corn, and a hint of pepper emerged. This was undoubtedly the highlight of the collection. They made the correct choice saving this one for last. I might actually purchase a bottle once I finish my next one. Penelope Toasted Barrel Finish Straight Bourbon Whiskey A complex bourbon from MGP Indiana, fully aged in charred new American oak, then finished in freshly toasted barrels. It spent a total of four years before being bottled at 50.0% ABV. It begins with aromas of grains, wood, fruits, and herbs & spices. Its rich and spicy character adds notes of raw corn, vanilla, burnt sugars, cherry, cocoa, and caramel. The finish is warm, medium in length, with hints of charred wood, soot, burnt marshmallows, charcoal, cinnamon, and pepper.

This is the final tasting from this year's Flaviour Advent Calendar... a pleasant surprise indeed. A smooth bourbon with toasted characteristics that mellows out perfectly. Perhaps a touch dry, but that might just be my perception this year. It's nice and mellow, ideal for a cold winter evening.

I've revisited this over the course of a year, and it has finally reached its peak! Enjoying it while making s'mores really brought out all the flavors! Nose: Burnt sugar, caramel, marshmallow, molasses. Palate: Honey, cinnamon.
