Peerless Single Barrel Rye Finished in Copper & Kings Absinthe Barrels is a joint bottling from the two Louisville distilleries. Peerless produces its rye using a sweet mash process instead of the standard sour mash. Following its initial aging, the whiskey is finished in an absinthe barrel from Copper & Kings. This bottling is offered at barrel proof and is not chill-filtered.

The absinthe barrels should have been allowed to air out more, letting some of the absinthe evaporate. It's overwhelmingly absinthe; it stinks of it. It should have offered a subtle hint of absinthe to complement the herbal notes in the rye, but instead, it's absinthe with a bit of rye. A misstep in my opinion.
The aroma is strongly licorice with hints of vanilla. The taste is intensely licorice, followed by rye spices and a subtle warmth that leads to a pleasant finish. Overall, this is an absolutely remarkable bottle. The absinthe finish is pronounced but enhances the pour's complexity. If you have the opportunity to try it, definitely do so.
Black licorice and spice on the nose really come through on the palate. The finish lingers.
Distinctive. A light black licorice flavor, but not excessively strong.
