Nose - a trace of vanilla, some sugarcane, and possibly marshmallow. Taste - a faint sweet vanilla and a little tartness. The finish has a slight spice but is rather short. Overall, it possesses a flavor profile that is halfway between a Scotch and a bourbon, which might have been the intention, but it ultimately lands in a neutral taste territory. Just adequate.

About this bottle
Dr. Pearse Lyons, founder and master distiller of Alltech Brewing and Distilling Co., is honored with Pearse Lyons Reserve. This Irishman, holding a Ph.D. in Biochemistry, aimed to create a malt whiskey blending traditional methods with American ingredients. The whiskey is solely from malted barley and undergoes double distillation in Scottish copper stills. It is aged in former bourbon barrels that previously held the brewery's signature Kentucky Bourbon Barrel Ale.

One of the absolute worst spirits I've ever tasted. I'm sure someone would enjoy it, but not anyone I know; I literally poured it down the drain. Giving it a quarter star because I didn't throw up.
Enjoyable on its own. Has a funky character from the pot still. The nose presents milk chocolate. The palate is sweet yet also tart and astringent. The milk chocolate aftertaste lasts for a very long time.
Unremarkable, sweet, and rather dull. It would greatly benefit from water to temper the sweetness and introduce summery barrel notes. I'm not a big fan.
A superb single malt to wind down the day. It's best enjoyed over ice, which enhances the rich, fruity flavors.
