In Palisade, Colorado, Peach Street Distillers produces a variety of craft spirits, including vodka, gin, d'agave, whiskey, and brandy. Their gin is aged in barrels previously used for their bourbon, giving the barrels a second use. Jackelope Aged Gin uses the same botanicals and juniper berries sourced locally as their standard gin, then it is barrel-aged and bottled at 40% ABV.
