Seattle's Capitol Hill neighborhood is home to Oola Distillery, founded in 2011. This grain-to-glass facility produces vodkas, whiskeys, and an aged gin. Their wheat-based unflavored vodka serves as the base for their gin, which is infused with thirteen botanicals, including dried rose, hibiscus, black lemons, coriander, and lemon thyme.
