Old Soul Single Barrel High Rye Straight Bourbon (Binnys)

Regrettably, no age statement is provided, but the composition is 75% corn, 21% rye, and 4% barley. The aroma is moderate yet agreeable, with some sweetness and minimal alcohol presence for 109 proof. I would venture to say it shares at least some characteristics with the 15-year expression, though without certainty. It presents with sweet cinnamon upfront, tart, dusty oak in the middle, and corn sweetness on the finish. Quite enjoyable, even if it doesn't match the 15-year. The truly intriguing aspect here is the dusty wood note, which sits somewhere between a Beam peanut characteristic and a Barton barndoor profile, perhaps even a blend of both. The absence of banana esters leans it more towards Beam than Barton. Coincidentally, I have an open bottle of 1792 Single Barrel nearby, and indeed, rather than banana, peanut and corn notes are the dominant sugars, with only a faint hint of vanilla. The rye components are well-integrated, and I suspect there's more than just four-year-old spirit involved. This leans towards a bready cinnamon rather than a festive, holiday spice cinnamon. The lack of harshness on the finish suggests this is a very good bottle; my only question is regarding the price. If it's under $70-$80, I'd recommend purchasing it. After all, you can acquire a 1792 Single Barrel for considerably less, or an Eagle Rare for a similar price. This producer has sourced some excellent distillate. It's definitely one for collectors. Freshly opened. First pour. Nose: pecan praline, faint wood/sawdust, subtle butterscotch Palate: intense, rich spice. Almost purely baking spice. Warm coffee cake. Finish: Warm salted pretzel. Churro with vanilla ice cream. Very long finish. This tastes like a spice rack, complete with the shelves. Abundant wood influence complements these vibrant spice notes. I would have preferred something else like fruit or caramel, but it's good. Edit* - As it opened up, I detected a lot of coconut and perhaps crème brûlée. Definitely enjoying this.

Really good. A strong caramel vanilla aroma transitions to the palate and concludes with a spicy finish, similar to a high rye.
