A well-balanced Kentucky Straight Bourbon Whiskey from IJW Whiskey in Kentucky, featuring a 28% wheat mash bill using an ancient wheat variety called Old Emmer. It was aged for a minimum of 4 years in new charred American white oak barrels and bottled at 48% ABV. The aroma is inviting with notes of grain, tree fruits, wood, and spice. The rich palate delivers notes of wheat, apple, sherry, caramel, and vanilla, culminating in a warm, medium-length finish with hints of honey-oak.
