Oak Eye KY Bourbon

Second Sight Spirits has been producing their four-grain Oak Eye bourbon in small barrels for several years. Each bottle indicates the mashbill, barrel size, and char level. My bottle has a 2 YAS (Years of Age Specified), at 92.2 proof. It was aged in a 15-gallon barrel with a level 3 char. The mashbill consists of 72% corn, 16% wheat, 5% rye, and 7% malt. I've been enjoying this bottle since May of this year. Color - A deep, dark copper. Nose - Caramel and oak are immediately apparent, followed by a hint of stone fruit (plum) and a subtle peanut note. There's also a slight ethanol presence. As the bourbon sits longer, a vanilla note develops. Palate - The bottle's name accurately reflects its character. Significant oak is present, along with vanilla frosting and nutty notes. The stone fruit is also there, but fleeting. Finish - A medium-short finish where oak is the predominant note. Smacking the lips and tongue can bring back the vanilla/caramel flavors. Overall - As someone who enjoys double oaked and older bourbons, this meets my expectations. It's a straightforward expression and certainly not complex. For me, it's an enjoyable sipper. Despite the slight ethanol note on the nose, I detected no spice or burn on the palate or finish. Those with more discerning palates might find it lacking. Nevertheless, I appreciate this bourbon for what it is and consider it one of my regular choices.

Alcohol and oak on the aroma. True oak notes on the taste, quick finish. Very little sweetness. Overall a unique and pleasant dram.
