This mezcal is quite different. I've noticed that most mezcals have an earthy, smoky flavor as their base, with mineral clay on top, followed by the distinct flavor from the specific agave variety. And unlike whiskey, I don't think there's any way to mask bitter or underdeveloped flavors through secondary finishing; it's just agave and water. Plus, plenty of sun for natural fermentation. In this instance, I was taken aback...because I didn't detect the clay or earthy notes. I perceived a sweetness, almost like artificial saccharin. It's not bad...it's just not to my preference. It's akin to opening a bottle of Ardbeg and suddenly getting a Balvenie heather and honey aroma.

About this bottle
Founded by Jorge Rodríguez-Cano and Santiago Suárez Cordova, the brand, whose name means "you will love," is a cooperative effort involving five mezcaleros in Oaxaca's San Juan del Río village. The mezcal is produced from 100% Espadín agave grown in the hills near the distillery. The agave is roasted for five days in conical ovens using Holm Oak logs. Traditional methods are employed, including horse-drawn mills for grinding, open pine vats for fermentation, and copper pot distillation. Both the agave cultivation and the oak used for roasting are managed sustainably, with replanting initiatives in place.

A delicate, flowery agave scent appears. Hints of smoke from a campfire are subtle and enticing. On the first taste, the creosote is more prominent, yet still very mild and easy to enjoy. The overall agave taste is quite deep and full of flavor, with dry, yet smooth vegetal notes. The body is moderate, and the finish is moderately long. This is a delightful sipping mezcal that would also be excellent in mixed drinks.
Tried neat and over ice in Mexico City. Very smooth but very mild on the smoke, and the more smoke the better for me.

The aroma is of light smoked wood with a hint of citrus. The taste is warm, earthy, woody, and lightly smoky.
It's well-balanced with a pleasant smokiness. Works wonderfully neat or in a cocktail like a smoky margarita.
