Concluding my exploration of some Macallan expressions, I have a sample of a 25-year independent bottling distilled in 1993 and released in 2019 at 49.2% ABV, from a single bourbon barrel that underwent a secondary maturation in a sherry octave cask. The aroma is robust and intensely sweet, beginning with powdered sugar-dusted cherries jubilee, sweet lemon-lime cheesecake, and aged leather-bound books, followed by light roast espresso, dark chocolate ganache over figgy pudding, musty cellar-like minerality, and freshly lit sweet pipe tobacco. It then progresses to butterscotch caramel over poached pears, sautéed mangoes, and mandarin oranges, transitioning to ginger, cloves, cardamom, and polished antique furniture, with a moderate alcohol presence. The palate offers a rich, syrupy texture, starting with a blend of sweet creamy tropical fruits, butterscotch crème brûlée, Black Forest cake, and aged leather-bound books. This is followed by light roast espresso, caramelized figs, cellar-like minerality, and sweet pipe smoke, then poached pears, sautéed mangoes, and mandarin oranges, evolving into ginger, cloves, cardamom, and freshly varnished antique furniture, all with a moderate alcohol sting. The finish is lengthy, featuring creamy tropical fruits, butterscotch pudding, Black Forest cake, cellar-like minerality, light roast espresso, sweet pipe tobacco, aged leather-bound books, and freshly varnished antique furniture. This is whisky indulgence. The aroma is bold and powerful, filling the room with syrupy sweetness and creamy citrus, underscored by dusty polished oak and earthy spices. This carried through to the palate, which has a thick, syrupy mouthfeel perfectly balanced by the addition of tropical fruits. The finish is long, beginning with a mix of rich creamy fruits, butterscotch, and luxurious chocolate before becoming mildly earthy with a musty character and antique furniture notes that linger for several minutes after each sip. After sampling the 2020 release of the standard 25-year Macallan, I found it to be an exceptional dram, though the flavors were more subdued than I prefer, with a mild bitter spice preventing it from achieving a perfect score. However, this single cask from North Star resolved those issues by amplifying those flavors significantly, delivering an exquisite and potent dram without any bitter spice.
