Loonshine Minnesota Craft Organic Whiskey

Let me begin by saying that Loon Liquors is absolutely worth exploring, and their other products are excellent. This whiskey, however, is not their standout offering and is best suited for mixing. It's ethanol-forward, followed by notes of fresh oak, grass, and a hint of pine. The nose is sweet, the palate is light, and the finish is primarily a slight burn. It tastes very new and isn't particularly complex, but it's not unpleasant in any way. Loon offers several small-batch craft ryes (including a standard version and a barrel-proof option, the latter being significantly better at only 55-72 proof) that are superb and will improve with age. Currently, they all have fresh, bright palates with much of the mash bill coming through, which makes sense given most are aged between 42-48 months (as of summer 2023). The team at Loon certainly knows their craft. The primary factor here is the distillery's newness; it would be unreasonable to expect a fine craft whiskey without years of development for the mash and various aging experiments. Give them a decade, and Loon will be producing exceptional whiskey!
