During this transition, they developed a novel purification method for spirits they term "Quantum Distillation Refinement Technology" (QDRT). This 5-step procedure purportedly removes up to 65% of congeners, allowing the spirit's full character to emerge without harshness. Legends Distillery in Cummins, GA, is the outcome of this endeavor, notably featuring their Single Barrel Bourbon. It's bottled at barrel proof (my sample registered 123.70 proof) and aged for a minimum of 3 years (mine was seven years old.) The aroma presents sweet vanilla cream, butter, and a whisper of nutmeg. The taste echoes these sweet characteristics with caramel, smoothly transitioning into expected baking spices. The finish is brief, leaving a drying sensation. For a single barrel, barrel-proof sourced bourbon, the finish is indeed shorter than anticipated. The body is somewhat thin. While the flavor and notes on the nose and palate make this a solid sipper, I desired more from the finish.
