Guillaume Drouin created this gin, the first from the Drouin family, using 30 varieties of apples from their orchards. The apples undergo two distillations in three small copper pot stills after fermentation. Eight botanicals, each distilled individually, are then blended with the apple base. These botanicals include juniper, ginger from Brazil, almonds, and rose. It is produced in batches of 2,850.

I'm not a big fan of this one. It's light enough to go down fairly easily, but the more complex botanicals like vanilla, cardamom, cinnamon, or ginger are not perceptible. Instead, rose dominates the profile to the point where it tastes slightly like soapy water with juniper and citrus, the citrus being more prominent with tonic.
It's based on apple distillate (cider) with botanicals steeped separately, then blended and aged for 8 months. The aroma features green, tart-sweet apples, reminiscent of baby food. Cinnamon and vanilla are present. It evokes apple strudel with powdered sugar.
Drank with FT tonic. It's woody, smoky, quite bitter, with notes of lemon peel and grapefruit. The finish leans more toward the floral and wood aspects.
Excellent. Enjoyable neat or with a quality tonic water.
A nicely balanced gin.
