I was at a very nice bar in Houston, and a gentleman was introducing this dram to the bartender. He kindly gave me a sample, and here are my thoughts on this Laws Centennial Straight Wheat Whiskey, 5 years old, bottled in bond. Bottled at 50% ABV, with a tawny color. On the nose, it was incredibly intriguing with surprising aroma notes. It begins very woody, like merthiolate. Then cream for treats, burnt notes, crushed almonds, and creamy mocha. It improves significantly with time. Hazelnut notes emerge. The aroma is peculiar yet appealing, with hints of wafer and coffee. On the palate, it doesn't offer much, but it's not bad. It's woody and nutty. Red fruits with spices are present. The aftertaste is slightly better, featuring classic American whiskey flavors. Clove, prunes. A short, sour finish. Overall, the nose was interesting with its surprising aroma notes, but everything fell short on the palate and in the aftertaste. Nothing is unpleasant, but it's unlikely to become anyone's favorite dram. My score for it is 69 out of 100.

About this bottle
This is the third release in the series, made from 100% Soft White Centennial Wheat cultivated in Southern Colorado's San Luis Valley by Jason Cody of the Cody Family Farm and Colorado Malting Company. The whiskey's mash bill incorporates both raw and malted centennial wheat. It was aged in fourteen barrels selected and produced at Laws Whiskey House during the summer of 2015. The liquid aged for a total of five years and eight months before being bottled at 50% ABV. It became available in May 2021.

Brief review from Whiskies of the World Dallas: This 100% wheat whiskey is Bottled-in-Bond and aged over 7 years. The Colorado-grown grain is prominent in both the aroma and the taste, with a spicy, short to medium finish.
Aroma: wheat husk, grass flavor: sweet malt, rolled wonder bread. Finishes quickly and doesn't fill the mouth.
Warm cinnamon with a touch of licorice.
Anise and spice notes.
