Palate: Fairly oily consistency. Soft and velvety. Honeyed malt with vanilla and gooseberry is gradually replaced by swelling warm barrel spices and gentle oak with hints of semi-sweet chocolate. Finish: Medium length. Soft oak and barrel spice with hints of sweet malt. Summary: This is a perfect example of contemporary Single Malt Scotch. This bottling is still young for a Scotch, but the extended fermentation and slow distillation have created a beautiful whisky. There are no flaws to be found. Kingsbarns is a distillery to watch closely in the coming decade.

About this bottle
Kingsbarns Doocot stands as the brand's primary whisky, taking the place of the retired Dream to Dram. The barley used for its production is sourced from within 6 miles of the Fife distillery. Employing a prolonged fermentation and gradual distillation process, this single malt is both distilled and matured in two cask varieties: 90% of the whisky comes from ex-bourbon barrels, while the remaining portion is housed in ex-Portuguese red wine casks that have undergone shaving, toasting, and recharring. Notably, "Doocot," pronounced "doo-ket," is the Scottish term for a dovecot, a detached structure for nesting doves, and is one of the architectural elements of the Lowlands distillery. Doocot has been available internationally since March 2023 with a suggested retail price of $59.99.

A welcoming aroma of malt and light vine fruit. The taste begins sweet with a rich malt character that quickly transforms into a berry jam flavor. Fruity, well-balanced, and warming, this whiskey is quite remarkable. The body is medium-light, but its rich texture makes it feel heavier. The finish is long and concludes with a raspberry-like coating.
Aroma: Gentle, malty, fragrant, with delicate citrus notes. Taste: Smooth texture. Tastes of tropical mango and pineapple. A spicy kick. Finish: Sweet, cooked pineapple. Barrel spice.
