Look: Clear, with a light yellow-brown hue. Smell: Evokes the Australian outdoors. Earthy, dry botanical scents with hints of citrus and a touch of floral. Taste and Mouthfeel: Sugary and piquant with notes of pepper, exotic fruit, and botanicals. The consistency is similar to diluted syrup; while quite sweet, it doesn't become overwhelming. This is a pleasant liqueur from Killara distillery. It's said to follow an old family formula featuring pepperberry and a local citrus relative (perhaps lemon myrtle or finger lime?) as primary tastes. It possesses a warming, spicy, and botanical profile that brings to mind the scent of a rural gift shop. I could have sworn there was also some lavender, giving it that 'old-fashioned linen drawer' fragrance. I found this enjoyable, though not particularly outstanding. Nevertheless, I'd gladly sample more. If you're visiting the distillery, it makes a fine memento for anyone who appreciates liqueurs. I only tried it straight, but the Killara site suggests it's good with ice and soda or ginger beer. Tasted at the Killara Distillery bar on August 10, 2024. Rating: 79/100 (2.75 stars)
