From the Barony of Duhallow, County Cork, Ireland, this Irish Whiskey is made in copper pot stills with 100% local Heirloom Barley and pure Irish spring water. It spends 10 years aging in ex-Bourbon barrels and is finished in ex-Oloroso casks, bottled at 40% ABV. It opens with aromas of grain, fruit, and spice. The palate is rich with barley, banana, and Sherry notes, leading to a delicate, medium-length finish of oak, vanilla, and a touch of smoke. May / August 2022

The aroma features wood; likely sherry cask, but it seems more like a bourbon barrel. Also notes of vanilla, apple, pepper, and a subtle soy sauce hint. The palate is lightly peppery, with wood, sherry cask, vanilla, and grain. The finish is light and peppery. It's not particularly impressive, but it's also not objectionable. It's a good choice for a drink that is both decent and not something I feel the need to save. I initially rated this a 3.75, but its flavor profile lacks sufficient impact.
