The aroma initially presents as umami but quickly shifts to a rich, earthy sweetness. Notes of strawberry candy, unsalted butter, sweet potato, and a faint herbaceous quality are present. The palate is rich and sweet, with prominent notes of sweet butter and earthiness. The candy strawberry, reminiscent of what you might find at a bank teller's desk, remains. The finish has good length, with a slightly minty and bitter character. The earthiness is complemented by pleasant cooking herbs and a subtle vegetal note. This is my first time trying imo shochu, and I find it delicious. It's rich, precisely sweet, and complex. I highly recommend it.
