Nose: Lively, with subtle botanical, woody notes and faint citrus. Juniper is mild, and a slight alcohol scent is present. Palate: A mellow and fairly neutral profile, with mild botanical juniper being the most apparent characteristic. It's sweeter than dry, and its creamy, nearly slick texture is the most striking aspect. A whisper of licorice and a nutty taste are also detected. Finish: Brief. Gentle, creamy, sweet, and somewhat botanical. Wattleseed is a seed from Australia, harvested in bulk from acacia trees. It's a versatile ingredient used in many Australian food products, often alongside or in place of nuts, cereals, and other seeds. Its aroma is subtle. When ground, it smells faintly of crushed sunflower or pumpkin seeds with very faint cinnamon and cumin. Its flavor is where it shines, falling between chocolate, coffee, carob, and hazelnut. It also imparts a creamy and slightly slick texture to foods (wattleseed and macadamia ice cream is quite popular). In this spirit, it provides a mild botanical and woody note and the smooth, creamy texture. The other spirit from Ironbark has a more pronounced citrus character due to lemon myrtle leaves, but in this expression, the myrtle has been reduced. This tends to make the palate a bit subdued, with the focus almost entirely on the texture.
