Tara Barbour 3.0

Nose: Strawberry, tart rhubarb with vanilla custard, and a mix of berries with cream. Palate: Sugary fruit and spice notes mingle with mild white pepper, tart cranberries, and sweet plums. The influence of the wine cask imparts a subtle barnyard character. Finish: Sweet, peppery spice, with more sweet and fruity notes. A chili pepper heat lingers on the finish, which turns a bit tart towards the very end, reminiscent of dry vermouth. This is a decent dram, though a bit fiery on the finish. It presents a significant amount of fruit upfront, like berries and plums, but they lean towards the tart/unripe side. It's enjoyable, but the sourness on the finish prevents it from being a go-to for extended drinking.
