Homegrown Boone's Bourbon

This is a 117 proof barrel strength bourbon that doesn't taste like it. It has a very clean aroma, with subtle notes of caramel, vanilla, and a touch of pepper. On the second sip, the caramel becomes more prominent, followed by a smoky flavor. The pepper hits strongly at the finish, which I really enjoyed. According to the label, this is only 6 months old, which genuinely surprised me; it drinks like a much older bourbon. I am very interested to taste this bourbon in a few years.

An intense Bourbon from South Carolina, made with a mash bill featuring at least 51% corn, a bit of rye &?, aged in new charred American white oak barrels & bottled at 58.5% ABV. It begins delicately with notes of grains, wood & spices; then develops a rich & intense profile with hints of sweet caramel corn, cinnamon, oak, vanilla & pepper; concluding with a bold, medium-length finish. February / August 2022

The aroma is straightforward, gentle, and grainy in an accessible manner, presenting a sweetness like custard that intensifies with the young woody character as it develops. The palate, again, is simple and light with fruit, dominated by grain and raw wood – the two elements haven't yet merged. The finish is sweet and woody.

Acquired at barrel proof, 114 ABV. It has a rye-like aroma, but it's not overwhelming. The taste is sweet, but less spicy than the aroma suggested. It goes down smoothly and warmly due to the alcohol content. Quite good for a 6-month-old spirit; I would love to try it again if a barrel aged for a longer period becomes available.

A slight sweetness, which builds into pleasant spice, and finishes long and smooth.

This one has a significant burn going down; it's a bit better served on a large ice cube.
