It's interesting to encounter a local Washington Amaro. The aroma is quite mild, despite its high ABV for an Amaro. Coffee, candied toffee; there's a lot present here. It's truly unique and likely excellent for mixing in cocktails.

About this bottle
Highside Distilling, a family-owned and operated facility on Bainbridge Island, Washington, produces this amaro, one of three variations. It starts with their own gin, made from Washington-grown apples and ten botanicals, including juniper, orange, rose, bay leaf, cubeb berry, and vanilla. The distillate is then macerated with five bitter herbs and aromatics, such as rhubarb root, whole bean coffee, and cocoa nibs. This mixture matures for six weeks in 53-gallon Kentucky bourbon barrels that have been previously used. Raw honey harvested in Washington is used for the final touch.
