Within the gum notes, there's a subtle hint of strawberry and banana, plus a whiff of black pepper. The longer it sits, the more banana I detect in the smell. Taste: Mirrors the nose but transforms into banana cream pie with a spicy finish featuring clove and a touch of vanilla and cinnamon. It reminds me of a German hefeweizen. It's similar to another bourbon, but undoubtedly superior. Ultimately, it's not my preferred flavor profile, but it's certainly intriguing and commendable for a young bourbon from a craft distillery.

C: pale gold N: crusty bread, nectar, faint orchard fruit P: sweet cream, nectar, subtle warm spices F: peppermint, hint of cantaloupe, faint burn on the finish Minimal wood influence (as anticipated for a 4 year 3 month old), yet it delivers plenty of other tastes. Excellent decision to bottle it at 107 proof - it might not quite rival OWA, but it's a very pleasing product from a nearby craft distillery!
