The bourbon's aroma is peppery with touches of cinnamon, clove, and allspice. A sugary butterscotch note is also present. On the palate, the whiskey is sweet and zesty. Following a sweet vanilla flavor, it becomes nutty. The drink's spice emerges between the body and the finish, with just a hint of peppercorn in the aftertaste. Overall, it's very pleasing. The bourbon's spice is superb, beautifully complementing the sweetness, and leaving a warm sensation in the chest. The peppercorn from the finish develops into a slightly woody lingering taste. Best savored neat, though a tiny bit of water might further reveal the flavor. I would not ruin this whiskey with mixers.

In the Glass: Wood, Smokey, Sweetness, Slight Honey. 86.6 proof. This Evan Williams Single Barrel 2004 is very good, smooth, woody, spicy, and robust. It had a great feel, taste, and overall flavors! Butterscotch on the nose, but it took time to emerge. Initially, I didn't detect it. The flavor hit me with nuts right away, very good, and there's an unidentified spice (I'm not much of a cook) that appears late. That spice is very well-balanced. The finish: the spice is present and not overwhelming, which is great for days when I'm not feeling aggressive.
