This reminded me of Laws Four Grain Straight Bourbon due to its similar bread/dough notes. Unfortunately, I didn't like this one nearly as much, as a strong acidic flavor detracts from it.

The Family Jones produces Ella Jones Straight Bourbon using a mash bill of 75% corn, 15% rye, and 10% malted barley from Colorado grains. Released in May 2020, this self-distilled bourbon is pot distilled, aged for about three years in charred new American oak, and bottled at 94 proof.

Acceptable for mixing. Lacks distinctive flavor to stand out, but it's smooth enough for sipping.
I sampled a barrel pick at 64.4% ABV. It was sweet, attributed to its 75% corn content, which I appreciate.
Quite good for a small-batch bourbon. A nice blend of sweet and spicy characteristics.
