This 80 proof offering brings back a heritage from 1874. This distillery set the stage for many others in the region before Prohibition. The distillery is honoring this rich history by reintroducing the unique blend used in the original bourbon. Two different mash bills contribute to this interesting spirit. A wheated mash bill provides smoothness and sweetness, while a rye mash bill adds spice. Together, they create a unique taste from the past in your glass. Nose: The aroma is subtle, with a pleasant sweet corn, cinnamon, and a touch of orange zest at the finish. Palate: The cinnamon is warm and upfront, followed by the mild spice of rye and honey. Daviess County Kentucky Straight Bourbon is produced using a combination of a wheated bourbon mash bill and a high-rye bourbon mash bill. It is bottled at 96 proof and does not have an age statement. The Daviess County brand was acquired by the David Sherman Corporation, now known as Luxco, in 1993. Luxco also owns other brands such as Blood Oath, Rebel Yell, and Ezra Brooks.

Opened for 4 months Aroma - Grain, mint, butterscotch, citrus zest, light baking spices, subtle wood and alcohol. Palate - Peanut brittle, butterscotch, rye spice, thin honey. The finish is short to medium, with little flavor change from the initial taste. Minimal alcohol presence, despite being 80 proof. I believe this is a poor value. It tastes like watered-down older Elijah Craig mixed with an 80 proof bourbon, which is strange since it's higher proof than both. You'd be more satisfied spending less money on Elijah Craig or an even greater saving buying a different 100 proof option. This distillery's products are inconsistent for me; I like one but find others average. It's disappointing when a direct comparison to a similar spirit from a well-regarded distillery leads to the conclusion that this was poorly executed.
The aroma has a strong Buffalo Trace character, presenting a well-balanced mix of rustic oak, leather, and dark sweetness, with prominent peanut butter and cocoa notes that develop as it sits – a hint of coppery spice adds depth. The palate is initially underwhelming but gradually reveals creeping spice, oak, and sweetness over time. The finish is perhaps its strongest point, with a satisfying spicy oak fade.
Nose: Notes of maple syrup and caramel apple. Palate: A sweet flavor, similar to toffee, with an oily texture. However, the sharpness detracted from it significantly. It's an adequate sipping bourbon, but better suited for mixing with cola.
It looks beautifully clear and amber. You can smell candy corn and various grains. The taste is candy corn with rye spice. The mouthfeel is medium, and it finishes with a smooth, strong, but not harsh, impact.
It's apparent this doesn't have extensive aging. Considering that, it's acceptable. Green apple notes are present, along with caramel and vanilla. This whiskey doesn't taste harsh at all. It's remarkably light from start to finish. Pretty good for the price point under $35.
