Dalmore 1990, 16yo, Single Cask Strength Signatory Vintage, cask 7320.

This year I've discovered how incredible the Signatory Vintage bottlings are. I'm now a bit fixated on the large corked ones that resemble a "man torso," and I've managed to acquire some rare releases. This particular one is a Dalmore (which are not commonly found in independent bottlings, or at least harder to find than others). Distilled in 1990, it's a 16-year-old cask-strength single malt, bottled at 61.5% ABV. Matured in a first-fill Sherry Butt, Cask 7320, bottle 295 of 585. It has an amber color with very heavy legs in the Glencairn. On the nose, it's a bit sharp and not what you'd expect from a typical Dalmore. Notes of acetone, nuts, and fondant. Green grapes. Chamomile tea. Burnt pineapple, with a citrus profile. It even smells like skin lotion. After the first sip, the aroma shifted to cheesecake. On the palate, it's quite flavorful. Chocolate and the most amazing coconut note I've ever encountered. Pineapple, and dry vanilla cake. The aftertaste was fantastic. Raisins, salt, sulfur, and very grapey. Lots of fresh figs and dates. Overall, it wasn't as good as I anticipated, but it's still a very pleasant dram. The characteristic Dalmore profile only emerged in the excellent aftertaste. However, I suspect some might find it a bit simple and harsh; for me, it just "could have been better." My score is 90 out of 100.
