Covington Gourmet Vodka

Crafted in Eastern NC from surplus Sweet Potatoes, this imparts Covington with a rich, oily mouthfeel and an almost savory flavor. A subtle sweetness is present, yet well-balanced by a vegetal, earthy note. It pairs well with tonic, but truly excels in robust drinks such as a Dirty Martini, Bloody Mary, or a Gibson. I incorporate this into a Gibson variation I've dubbed a "Tarheel Gibson"... a rinse of vermouth glass, Covington Vodka, high-quality cocktail onions (which are becoming nearly impossible to find), finished with a sprinkle of fresh ground black pepper. They also boast two exceptional slogans: "The Best Yam Vodka on Earth" and "American Vodka that's Gluten Free & Putin Free".
