This whiskey offers a very distinct flavor! The nose has notes of honey, wildflowers, bread, and possibly flaxseed or oats. The palate continues with honey and wildflowers, along with burnt sugar and a touch of char. The finish, as expected, is more honey! I have two thoughts: first, perhaps aging it for about 8 months in the Mead barrel was too long, and second, how does this compare to the Belle Meade Honey? Cheers to all!

The mead character is a bit too dominant for sipping neat, but it creates a fantastic mead-hattan.
