So, a new bourbon, and given my strong preference for sherry finishes, I had to try this one. Nose - Dill, butter, young oak, sweet notes, a darker sweetness, burnt caramel. It's good. A word of advice: this needed significant time to open up; initially, it was just okay. Taste - Buttery, oaky, and indeed sweet. The whiskey seems young; it starts to develop a nutty profile, but I suspect that's from the cognac cask, which is unfortunate as they usually impart much more flavor. I worry they may have obtained some poor-quality barrels for this. Overall, I hope it improves as this is a fresh pour, and I will revisit and modify my review if it does, but generally, this is not a good bourbon. It's not bad, but there isn't much happening beyond some off-notes, and it's a bit too intense. Yes, I would definitely pass on this. Rated 1 star because it's still a quality bourbon, but there are no positive aspects, and the price is excessively high for the results. Bottle is now finished; there was a night it was working for me on Friday or Saturday. Anyway, the cask influence developed and improved with some air. I ended up enjoying it a bit more with that. I still feel this was somewhat underwhelming, especially considering the cost, but I'm more positive about it now. I almost wish I hadn't finished it just to keep it around. Oh well, having the shelf space is also nice.
