Remarkably fruity, almost apple-like flavor profile. The body is light, and the oak tannins only come into play about mid-way through the journey. We are reminded of an eau-de-vie. The familiar “burn” of an 80 proof spirit is softer and more subdued, which is not a bad thing. Indeed, this spirit is designed for enjoying small sips as is, as opposed to watering it down over ice. Unique, and a rare experience to be able to try a barrel proof spirit that is entirely approachable without dilution. We applaud Cascade Moon for releasing what could have been seen as a generous loss to the angel’s share.

I simply did not connect with this one. The flavor is very limited, almost watery in character. The finish presented a bitterness. You can find much better options for significantly less money. I will not be purchasing this bottle.
This beverage costs over a hundred dollars? I seem to be missing something. It's clearly not robust. That's understandable. The issue is a persistent, syrupy sweetness that isn't pleasant.
