This spirit has a dark amber color, appearing the darkest in a flight of Bluebird spirits. The aroma is great, with strong notes of oak, leather, caramel, and vanilla. The taste mirrors the aroma, presenting abundant tannic oak, caramel, and vanilla, along with a touch of earthy complexity. The mouthfeel is full-bodied and dry, but not excessively so. Overall, it's a surprisingly excellent pour from a small, local distillery. Thoughts from a beer enthusiast: I'm uncertain about the use of "double oaked" bourbon barrels for aging beer. I assume both barrel types would be effective, but perhaps the second barrel would be superior? I haven't encountered beers aged in Bluebird barrels or any double barrel bourbon barrels specifically (though I've had many beers aged in barrels from distilleries like Woodford or Beam, both known for their popular double barrel offerings). I suspect these Bluebird barrels would perform well, given the quality of their bourbon...
