Using milk from Irish dairy farmers in County Cork, the curds are separated from the whey, which is usually considered a byproduct. Yeast is introduced to the whey, converting the milk sugars into alcohol, which then serves as the base neutral spirit for the gin. Eighteen botanicals are used in addition to the essential juniper, including various citrus fruits, elderflower, and sweet woodruff. Local well water is utilized in the creation of this gin.

Strong cardamom scent. Slight calpis/milk soda smell. Tastes of Indian spices, with only mild juniper coming through. Wouldn't recommend drinking it neat. Better in a G&T. R.I.P. Bertha. How will we ever move on?
