Barrell Craft Spirits presents Dovetail, a series of American whiskeys aged in a mix of ex-rum, late harvest vintage port, and Dunn Vineyards Cabernet casks. Each bottling in the series is presented at a distinct cask strength; this particular release is at 124.16 proof.

This review is specifically for Batch 9, bottled at 124.16 proof. Nose: Caramel and cinnamon. Any red wine presence might be masked by the oak. The port finish might be perceived as a general sweetness. The aroma is very appealing, and this is one of those spirits where the palate significantly surpasses the aromatic preview, even though I quite like the nose! Palate: I detect a warm toasted marshmallow flavor, something I haven't found in other spirits. I believe it's a perfect combination of the rum, port, and cabernet finishes. It's not excessively sweet, but perfectly balanced. Finish: The warm toasted marshmallow sensation lingers on the palate. Once I experienced this flavor, it became a specific profile I actively seek in other spirits. I strongly recommend acquiring this bottling. While Seagrass receives considerable acclaim, Dovetail is its equal. If I had the choice, this would consistently be in my collection.

Purchased this on Friday and I'm happy I did! A fantastic pour! Best wishes to all and I hope you have a wonderful 4th of July! It smells like apricots and fruit, with some charring. It's a bit zesty on the palate, but after one sip, I instantly desire another. Get a bottle!

If this were 80 proof, I would rate it 3.75. At 124 proof, I can acknowledge the presence of some complexities. Given the finishing process, I suspect a lower proof might have been more beneficial, but it's a satisfying drink for supper.

Earthy butterscotch on the nose. Palate features molasses, burnt sugar, and grape must. The finish has spice. It's rich. Rating close to 4.75.
