The aroma is very characteristic of Barton, who distilled this spirit. Spicy bananas are prominent upfront, with a bit of peanut mixed with charred oak. A touch of cinnamon, and perhaps some custard appears and disappears as the spirit rests, which also softens the spice. The palate presents a strong surge of hot, black pepper with dry charred oak, both of which immediately cover nearly the entire mouth. The banana recedes, as does the peanut. There are some subtle notes in the background that are too indistinct, but they make this a very intriguing bourbon. It seems straightforward on the palate, but there's something about it that compels you to return for another sip. Its appeal appears to be that the longer you let it sit, the creamier it becomes, leading to an ever-changing experience. The finish is long and spicy, with heat keeping the mouth tingling as a combination of creamy and dry oak slowly and pleasantly fades. This is quite similar to 1792 Full Proof, but with greater depth. Excellent for when you desire an intense spice experience.
