Appearance: This unaged spirit (technically whiskey) is clear and colorless like filtered water, with very thin and viscous legs. Nose: The aroma is unusual. It's reminiscent of tequila, with hints of eucalyptus, pineapple, lemon, overripe watermelon, and what I'd describe as 'sour vegetation'; it has a quality almost like arugula that has grown too long. Taste: The palate is a bit harsh. I detect notes of red apple, bitter chocolate, lemon, and (I apologize for this) that sensation in the back of your throat after vomiting. However, the taste becomes much more pleasant when paired with a good cigar. Finish: A long, almost minty finish follows this whiskey, emerging after that bitter, nauseating note. Thoughts: This whiskey is aged for two weeks in barrels before bottling, earning it a 'Rye' designation. It's an unconventional experience that certainly sparks conversation. The Distillery 291 uses this whiskey in place of tequila at their bar, and it works well. I would definitely recommend it as a mixer! Thanks to the 291 team for everything! Cheers!
