Distilled in February 1999 by the Zuidam distillery, this Dutch single malt was bottled in August 2013. It spent time in ex-bourbon barrels and was then aged for four additional years in first-fill Pedro Ximénez sherry casks, initiating the limited edition Millstone series. Availability is restricted in the US.

Pedro Ximenez shines, and the sherry influence is immediately apparent. It's well-balanced, with a soft and subtle peatiness that emerges at the end, almost like a lingering aftertaste. If you're seeking something intensely smoky, this isn't it, but I would recommend it to anyone desiring something a bit intricate.
Adding a cube of ice made it better. Notes of sweet cherry and caramel are present.
